Do you think GW would ever make a codex for the other SM chapters from the originals? E.G. Iron Hands and Salamanders... would you even want to see a codex for them or would that be overkill for SMs?

There's too many marine codexes as it is, to be honest. I sincerely hope that they don't.
Salamanders don't really need one as the Vulkan rules in effect reward you for building a list around his abilities. Similar to Whitescars and Ravenguard with their special character's chapter tactics.
Ironhands could be a good project but I don't think they would get an entire codex. Forgeworld have expressed an interest in doing something for Ironhand Marines and I wouldn't be surprised if they appeared in an Imperial armour book sometime. They would probably just release a couple of characters with special rules and a new chapter tactic for them like they did to a dozen or so chapters in the Badab War campaign.
Black Templars and Darkangels have reasonably old codexes and some of their units need a redesign so I would expect to see them redone in the next 3 years but we all know what GW is like and another Codex Space Marines will probably arrive soon after 6th edition. With SW/BA/GK blowing the socks of standard marines I can't see them leaving their flagship list so far behind for long.
