I've decided to start grey knights as I never had a tough/elite army and these guys seem really nice (plus I plan on a python knights of camelon scheme ;]).
However, two of my 4 main oponents play 100% mech (eldar and ig). The ig player has 6 chimeras with minmaxed meltas in them, two valks and two tanks.
The eldar player does pretty much the same (fire dragons, tanks, some token avengers).
I'm not looking for some minmaxed method to combat this. Would just like to know if the grey knights can reliably counter, so that the games aren't too one-sided.

is the basic way to go, psycannons on all, incinerator on DK. The above is more or less 1750pts so knock off DK for 1500 or add another squad for 2k.

You're gonna want dreadnoughts with double autocannons. They are just about the GKs' only solution to mech spam, at least from range. It is definitely feasible to play a Crowe/Purifier/Razorspam list that maxes out on minimal, double psycannon squads of purifiers and psybolt razorbacks (and throws in purgation squads with the same loadout as well). That much dakka is bound to take down transport spam, too.
These are really the only options the codex has available. Dealing with mech can still be a pain for the GKs, as it was in the days of old with the Daemonhunters codex....
Now, if you're willing to forgo using GK units, then you can build a Coteaz/henchman spam list that is based on triple-melta toting Warrior henchman units (with about 5 other bodies toting storm bolters) in Chimeras. That can do a number on mech as well. But few people on this forum play non-GK lists from the codex. (And I don't, either! )

Massed GKSS on foot can deal with them because of the deep strike and psybolts against chimera side armour and of course 2-4 shots per psycannon. If guard are in melta range then his chimeras are in charge range next turn. Krak grenades or might of titan will make short work of chimeras and 4 GKSS will probably kill another per turn at medium range as you arrive or advance.
Psyflemen dreads are good if the army contains other vehicles such as psybacks to dilute enemy antitank firepower. I however prefer to take 60 GKSS + 10 Interceptors + =][= with rad for 1850 points. All squads have a hammer, 2 psycannon and psybolts.
Eldar may be more of a problem but they are more expensive so get fewer tanks and I have no firepower above S8 to the wave serpents special rule wont hurt. The Eldar twin linked bright lance spend all game killing half a GKSS per turn and you have 70 MEQs for him to burn through so just go for the objectives and wait for him if you don't fancy deepstriking.
