Ive been looking into making a skitarii themed army.
The general idea being its all vet and mechanised.
However psyker battle squads are good in game, but how would i theme them into a mechanicus army and more how would they be modelled since they arnt Skitarii
One idea I had would be renaming them To something about the Omnissiah and having them be servitors and a tech priest.
Skitarii Marbo also needs to be modelled.
Im also unsure if they would have Armour like LMR or support like Colossus since in bigger games the titan will be the heavy hitter (2500+)
The skitarii themselves should only take some practise molding putty into hoods and cloaks, and some part swapping for bionics. Going with a basic Red paint job, replacing aquillas with the Mechanicus skull logo.

Its mobile enough to keep up with a titan but can support it from range if need be. The colossus I can rejig into LMR's but i like the idea of the big bombardment guns and str6 sp3 no cover is also nice

I think the mechanised theme works well for the ad-mech. They're in a position where vehicles are probably as expendable as troops. I'd take a tech-priest if only for the sake of appearances. With a good number of tanks he's not wasted points. Not the best unit but it seems important to have the one ad-mech unit in the IG codex for an ad-mech themed army.
I dunno if you've seen it before but Necron headswaps would look really awesome for the Skitarii:

The PBS has weaken resolve and the blast template so some kind of weird looking guns could work I guess. The issue is with them still being psykers, so at the end of the way you'd still need to do psychic test and runic weapons and psychic hoods would still block them. I'd leave well enough alone. The PBS is fun and gives you cool options but it's far from a must-take. An 8 man squad in a Chimera is 155 points so is freely interchangeable with a melta-vet squad.

They absolutely would, since they're the guys who manufacture the things. Looking at your sample list, I would advise keeping away from the Hydra and Colossus. Because the rest of your army is highly mobile (and must be mobile, to use the special weapons), they are likely to get left behind. Russes, Hellhounds and Basilisks would make better choices.Im also unsure if they would have Armour like LMR or support like Colossus
(And I strongly advise not squadroning units that need to be stationary, not unless you have plenty of infantry to protect them from charges.)
Fluff-wise, the Vendettas are hard to justify. They're Navy craft and the AdMech is a very insular organization. You could do a mech Al'Rahem platoon instead, to get some outflank action. An infantry platoon, to provide more bodies, would be fluffy enough. Replace Commissars with combat drug-dispensing servitors or something.One piece of AdMech fluff is the "electro-priest". This type of combat mage is basically a walking, lightning-throwing dynamo.
