the title gives of the question, how many models in a 2000pt army?
like Lost Nemesis said, it really depends on the type of army.
however, in your average build (not mech. not heavy infantry). you'd probably see close to 150 bodies. give or take a few dozen.
I currently run three 3-squad platoons and 2 armored fists in my 2000-pointer. So . . . 125 troopers plus HQ comes out around 136-148 depending on support squad configuration.
I don't use a lot of tanks, but I spend points on stuff like vox and commissars and I don't use conscripts, so 150 is a pretty good guess.

lets round off to 10 to accomidate special weapons and officers
that's 200 models in an all-infantry army...
personally, the 1500 point army i'm working on is about 70 models plus 7 tanks, and that's the mechanized army (every squad has a chimera) that pretends it's heavy support...
