I have always liked the Imperial Guard and I would like to start playing them sometime but for one thing: I dunno how to beat tau with them. Tau seem to be built to beat Imperial guard (except in urban or jungle terrain). I mean, the way guard plays is to make enemies come into range of their crushing firepower then grind them down in a battle of attrition with their superior numbers and amounts of guns. The tau counter this with having a longer-range gun than the standard guardsman so they do not have to advance into the deathtrap that is the lasgun's range. What would I do?

Tau certainly aren't that Hard for IG, especially if it is static, our Heavy Weapons outrange them.

Heavy bolter/grenade launcher squads or missile launcher/grenade launcher squads are nasty, especially if you get the special weapons (and, therefore, the lasguns) in range. I imagine mortars could be useful.
Yes. Fill out all three heavy weapons choices with Heavy Weapons teams. Your tanks are rather useless against our Rail Guns. The Guard player around here took 1 Battle Tank, 1 Demolisher, 2 Chimera's and 1 Hellhound against me. The Battle Tank was gone on the first shot, the Chimera's in the next turn, and the other two in the turns after that. The Demolisher fired once and killed 2 Fire Warriors, the Hellhound killed a handful of Kroot.
His 3 Heavy Bolters killed 2 Broadsides. I suggest 1 Heavy Bolter Team, 1 Missile Team, and 1 Lascannon Team. Tau will get 29" away from your lines and shoot from there.
Also, Deepstiking Storm Troopers in to get into HtH might prove to be a good idea.

I'm not sure what The Doctor means by the three heavy weapon choices.
Take a heavy weapon in every line squad, and maybe an anti-tank squad with 3 lascannons (just keep them out of range of the Tau).
But, Beware DevilFishes flying over terrain and preforming Fish of Furryies, it can be nasty.
And also beware of the dreaded J-S-J tactic, only a Bassie and touch units performing this manuver.
Or make aDrop Troop army and get lots of CC in, that could do it.
cept the fact that they have kroot(my friend takes alotta kroot)
could you clarify what j-s-j meansyou could always take a deep striking ally(grey knights perhaps?)
but yeah you need to out range them with h bolters.
also give your chimeras h-bolter turrets(yes you can do that) it make you so much more effective vs tau
watch out for marker lights(you know those thing the make his hit my tank on a 2+?)drop troop armies are a problem cause you not guarantteing that your whole army will come at one and getting within rapid fire range of tau isnt that good of an idea

J-S-J means jump-shoot-jump. Its a battle suit tactic cause they can move 6" in the movement phase then shoot then 6" any direction in the assault phase. Both of the moves count as jump pack moves as well.

Static Tau usually gets munched pretty good by IG. They simply can't take the volly of fire that we can dish out. They loose the battle of attrition.
However, Mobile Tau is where they get nasty. Tau does mobile shooty better than anyone out there. between StealthSuits and CrisisSuits, you'll have headaches
There's a few tactics that work against "J-S-S"
[IMPORTANT] If StealthSuits (and perhaps Crisis.. have to check friends codex) end their turn in difficult terrain, they have to take a Dangerous Terrain test!! 1/6 for SS to die (multiple can die), don't forget this rule!![IMPORTANT]
against SS you can always position a Vehicle (not Sentinel) in between them and your infantry. SS can't hurt the front of a chimera, so unless they can hit the sides of it, you can use it to screen.
Indirect. If they're far enough away from your bassie, then drop a big ol' pie plate on them however, i've found that mortars can actually be effective. if you place 1 in all your command squads they have a good chance of hitting a SS or multiple. yes they still have a 3+ save, but w/ a lil luck you'll kill a couple.
a Griffon may not be a bad investment (you can still use them).
Charge em!! RuffRiders (if screened) can overrun a squad of Stealth/Crisis suits. and w/ their Lances they'll take em down! Also a Hellhound (or even chimera) works. but i wouldn't use this on crisis suits who use the "Fire Knife" configuration.
these same tactics work against Kroot
So your going up against the Tau? Well there are few things you should know to utterly defeat them.
First of all, as strange as it my sound, you must outshoot the Tau to will. Sure, you could go into CC, but the problem is getting into CC, and 36 Firewarriors armed with 36 Rapidfire strength 5 weapons don't like you doing it either. Their most important weakness is their range, almost all of their weapons have a range of 30'' or less. That means Heavy Bolters, Autocannons, Lascannons, you name it will outrange them. Try to stay out of their range and you will destroy them.
Second, when man met the Tau, the Imperial Guard asked for a weapon to destroy them, and the Emperor did smile on them and give them the Heavy Bolter. The point of the story is to take mass Heavy Bolters, they will chew up and spit out any ground troops that dare to set foot on the game table. They are most effective against Firewarriors, Pathfinders, Kroot, Possibly Stealth Suits (To force them to take hundreds of armor saves) and Gun Drones.
Now, you probably wondering about our Tanks and such and where do they play a part against the Tau. The thing is, those evil Broadsides are Tank Destroyers to the max, I would not advise taking a Demolisher because of the range, but I would take a Earthshaker because you can hide it somewhere. If your going to take any tanks, take the Leman Russ and put it behind some hill in cover, it can use it's Battlecannon to support your army.
