compositon of a whole chapter. For the veteran company it says 20 Terminators or 10 veteran squads. If its 20 ten man terminators thats more than 100 space marines. Also, it dosn't give how many support vehciles per chapter. Please help. Thank you.

Support vehicles are of 2 origins:
Dreadnoughts, land raiders, and rhinos are attached to the individual companies (or squads in case of the rhino). Every other vehicle is part of the chapter's armory, of which the techmarines are in charge. They are assigned to battle companies when they go on a mission or crusade.

your other flaw here is assuming it is all neat and tidy.
When a veteran is killed, how do they replace him?

almost every chapter his its onw follibles and almost no chapter will have exactly 1000 marines at any given point
veterans are not really a binary thing, their stats are an agregation.
Companies, even battle companies, are by and large, an administative unit, forces are deployed to any given theatre, these are then split up and dispatched based on need (if you need a persuit force, terminators are not usefull) and availability.
The chances of a full company and only that company being drployed to an egagement and that company being exactly what liber Astaries proscribes, is pretty much nil

Well in "official" terms a chapter is 1000 men made up of 10 companies, a hundred men per company. I think that's only 1000 "fighting" men though, I don't think support personel are included in that total. However there's going to be variations because of recruitment, casualities etc. As for support vehicles, I've never seen anything mentioning how many per company.
In the old codex there's a picture of the ultramarines chapter, but I think some things are left out.

For the purposes of collecting a whole chapter of Space Marines, should...lets say a Predator count as 2 out of those 1000 fighting men?
Since it is crewed by 2 Marines...
That way you could have 100 Marines per company, but just about 50 scouts.
Or vary the numbers some other way.
And something else: Do the Chapter Master, the master of Sanctity and the Techmarines + al their crew count towards the maximum 1000 guys in the chapter? They are listed apart from the 100 men Companies...
All some confusing stuff, might aswell ignore it.

For example, Company's 2-5 allow for 2 squads of ten assault marines. Now, if you want five bikes then you lose 5 assault marines, as they are, in effect, assault marines on bikes. (check their armour) That's a bummer as, by the old rules, squads were always 10 men strong. You lose two marines per land speeder or attack bike.
So the break down was thus,
1x10 Marines + 10 bikes
1x10 Marines + 5 Landspeeds
0 Marines + 10 bikes + 5 landspeeders
etc etc ad infinitum.
So, I'm guessing that was intended so as to allow two squads of 10 assault marines and if you wished to include bikes you took them from the 8th company.
That's how I read it anyway, although it says nothing of the sort in the new codex.
As a rule for myself I use 1 rhino per squad, 1 land raider per terminator squad, 1 land raider crusader per terminator assault squad, razorbacks for command squads then 4 each of destructors, annihilators and whirlwinds per company (2-5).
I can't say I've seen it all but I live for the things that keep me hollow.
