First. do the loyal SM dreads have a thunder hammer ccw, like the CSM do. and does it act like the TH that the SM swing around? i have not found much on dread ccws?
Second. can a dread's ccw be a force weapon. well before that can a dread be a psyker? the dread hold one of the best heros librarians are some of the best in a chapter. and if its a gray knight dread well all GKs are psykers just at different levels.
Wel I don't know about GK dreads but I don't think vehicles can be psykers.
as for your other questions, no a dreadnought ccw cannot be a thunder hammer or a force weapon.

The old Chaos Dread model did have a Thunder Hammer modelled on it, but now it just counts as a standard DCCW, like all the various CSM Dreadnought arms. I miss the power scourge special rules myself.
Basically all DCCWs act like a powerfist now, but strike at initiative. Double strength, no save, strike at initiative.
As for 'psyker' Dreadnoughts no rules exist and most would argue against it in fluff, but as for me I don't see any real reason against it in theory....
For example I believe some of the Eldar Knights and Titans were in fact 'psykers'.
Perhaps the technology involved in making a Dreadnought capable of allowing a crippled psker to use his old powers is EXTREMELY rare.
Like, say confined to technology on the level of the Eldar, the Emperor's Golden Throne, or maybe the very highest levels of the Adeptus Mechanicus or Inquisition.
I suppose you could make a 'special character' Dreadnought that contained a crippled Sorceor/Librarian/Grey Knight and give it some wacky rules.
Just remember that typically(for example) CSM Dreadnoughts are crazed due to their situation, and a psychic trapped in such a form might be even crazier, even if it was a SM Librarian or a Grey Knight.
So whatever 'benefits' it would gain from being a psyker, it would no doubt have equally bad side effects.
It wouldn't be something you could use in anything other than friendly games though.

As previously stated, the CCW can't be a Force Weapon, Thunder Hammer, etc... Although in the case of the GK dread again, they do still have access to all the various gun arms that the Marines no longer have. (namely, Plasma Cannon, TL Autocannon, TL Heavy Bolter)
Currently I'm really not sure why you think that Dreadnoughts get any of those options. A cursory reading of the codex would show you that they don't.
Comes with DCCW as standard.
Can be upgraded to a Missile Launcher.
Doesn't state you can take stuff from the armoury other than vehicle upgrades.
