I know that there are thousands of players around the world and so there are thousands of Gk armies. The question is how do you envision a 1000 man Gray Knight Chapter? As in how many Gray Knight units, Gray Knight Terminators units ,and such....
There is no answer to this. The GK don't follow the index astartes rules for organization, so they could have any number of grey knights, not neccessarily 1,000.

The GK don't follow the codex in most ways. One of these ways is the number of marines in the chapter. Since they have to, as a single chapter, cover the entire Imperium at once, they have many small outposts hidden all around. Due to this there is no accurate count of their numbers, outside of chapter records.
I imagine that the general force distribution is 70%+ GK in power armor, of varying ranks. The rest would be split between GK Terminators and their officer types, with a smattering of Dreadnoughts & vehicles - since no vehicles are actually fluffy for GK, and GK rarely survive to become Dreads.
Grey knights follow a very different organisation, their unit organisation is secretive and very much unlike the SM.
