A lot of armies require special and assault weapons, and I understand this, but is thier a place I can buy bits specifically for guns? For instance, I like to have my sargents (vets) with bolters, but I can't find enough models for that. Can anyone point me in the right direction? (I've checked games-workshop.com but they don't have much of a selection, and I could only find ONE guardsman that comes with a bolter/storm bolter!)
I like Battlewagon Bits.
Google that name and its website comes up. They take paypal and are an all around pretty good place to get bits from.
That or you can just ask a marine playing friend. He's bound to have loads of Bolters in his Bitz box.
For things like Plasma guns, I think the best way is either to convert a Flamer (see the stickied Money Saving conversions thread in the Conversions area) or buy the metal Plasma guns at £1.25 and just put those on a standard guardsmen.
The blister Special weapon guys really suck IMO.
There are some GW mail order bits that have good guns/items on them. But finding them is a pain because their Search function is atrocious.

As archaon said: Your best option is getting bits of friends.
Spacemarines are always good for the loose bolter or two, Chaos-Marines have Plasmaguns in bundles and the odd meltagun can probably be handled off the nearest Space-Wolf player.
This is so far what I have needed (other than Dark-eldar bits for my Sniper Rifles).
But what about arms? Do they all still fit the same models? 'Cause I'd just buy a shock trooper set and customize them the way I want if I can get my SM buddy's stuff. (He's got guns coming out of his nose)
They should easily fit. I used the flamer-arms for my Plasmaguns. Cutting the gun about the handle, filing a little bit to make it fit. Can't remember where I cut the flamer though... Then allso I had the handle for the left side, wich I think looks better than simply holding them.
Just make sure to koordinate where you cut the weapons, then there shouldn't be any problems ...
