Ok I'm a bit worried I'm not packing enough anti-tank for a 2000pt list.
So far I've got three lascannons & three missile launchers.
I don't think this is enough for 2000pts. Can anyone suggest some anti-tank units that aren't lascannons? I prefer not to use them for modeling reasons.

Only anti-tank are lascannons, missile launchers and meltaguns. Just get more heavy weapon sets mang, lascannons are a great asset to have.
In a 2000pt list I would have 9 Lascannns. 6 in two dedicated HW squads, and three somewhere else. Tanks or MCs, you need them.

How many Infantry Squads are you packing, and what heavy weapons do they have? Typically what works effectively for Guard is if you leave most of the infantry-killing duties to your tanks and to dedicated Fire Support Squads, while Infantry Squads, Vets, and the like tackle the anti-tank duties and protect those precious lascannons with lots of warm bodies.

I've got two infantry platoons, with three squads in each. One platoon is packing the lascannons one has the missile launchers. I think I'l cut back a bit on things I don't really need as I've gone overkill on the anti-horde with 2 bassies an exterminator and two hellhounds.

You should cut down a little on anti-horde (Lasguns aren't the worst ever at it) and throw in something else anti-tank. If you don't want too many more Lascannons, etc. then I do suggest either Deep Striking/Infiltrating Storm Troopers, or Infiltrating Veterans, all with Melta weapons. The DSing Storm Troopers could fall in behind some tanks and shoot them to bits.
I'd consider some Autocannons. See this Article for some reasons.
Its based on lots of Autocannons rather than on say 3 which is the number you may field. However the math doesn't lie, its also based on Marines, so the 3+ to hit is used rather than our 4+. But that doesn't matter much.
As for uses in the Anti-tank role, it can be seen that the Autocannon is better at glancing and penetrating armour of 12 or lower than the missile launcher is. So perhaps a few autocannons in your army to deal with light transports like Rhinos/Chimeras and equivalents would allow your big guns focus on the big armour.
Once your done with light tank busting, the article shows that the autocannon is slightly better at killing non-MEQs and 2+s than the missile launcher (Krak).
