I was fortunate enough to get my butt handed to me by a very good player a couple of weekends ago. He played Space Wolves, with lots of drop pods and bikes. After seeing how effective bikes could be I decided to get my own bikes together in a Bike heavy list, to see what I can do with them.
The two squads that I am firm on are a 4 scout bike squad, with a vet sgt with teleport homer and power weapon. And they all have melta bombs. The second squad is composed of 3 bikes, 2 with flamers, and a vet sgt with a power weapon and a bolter/flamer. They have a Chappy on a bike attached who speeds around with a power fist, melta-bombs and artificer armor, just in case I want to detach him to go wreck stuff on his own.
The question comes in with my last squad. 3 bikes, plus one attack bike, and here are the two options I am thinking about, and why;
1) Melta Death - multimelta on the attack bike, 2 meltagun bikes, and a plasma pistol/power weapon vet sgt. At 24" they can use their bolters and the multimelta, at 12 inches its a plasma/melta barrage. This unit would do well to kill multiwound HQs, and obviously vehicles - hell I wouldn't mind tackling a monolith with this since even a glancing result penetrates.
Downside: I need to be within 12" for this unit to be the most lethal, which puts me in charge range. Most likely I'll have to commit to the charge myself to avoid this. With initiative _, I'm not sure if that's what my bikes need to be doing.
2) Plasma Death - still multimelta on the attack bike, but then 2 plasma gun bikes, and a bolter/plasma combo w power weapon for the vet sgt. At 24 inches I could do 2 plasma shots (maybe three if I use my combibolter), and the multimelta. And if I feel like unleashing suicidal 12 inch plasma death, then it is up to 6 12" plasma shots before the charge.
Downside: Even though I I will be able to outmaneuver most enemy squads, moving 12" and firing 24", there is that nagging worry that an unlucky roll could mean the loss of a bike to a plasma gun blowing up, and there aren't that many to begin with. Plus, killing 2, maybe 3 units a turn is not exactly going to win any games. With a T_, it seems the bikes should be charging something.
And if wondering why there are so many power weapons around, Bikes are ultimately responsible for getting behind enemy lines and tackling teams of heavy weapons or vehicles. If I run into that havok squad head on, I want some power weapons at the forefront, and let the_ toughness keep my guys alive hopefully.

I love Bikes,
Classically there are 2 SM bike armies:
Ravenwing (Dark angels 2nd company, which is also speeder heavy, and whitescars, the traits rules now however allow you to field an all bike trait army,
I have to say I have seen whitescars played onece as an all bike army well and it was an epiphany, simply put, the whole army moved as a hoard, it hit one end of the battle line and just chewed its way along it,
scout bikers are not that effective, for the points marine bike squads cut it far better
Bike mounted weapons (Twin linked bolters) are more than adiquate, do not waste points on adding flamers
Melta guns are necessary to take out armour and weaken monsterous creatures
Base your army like that and you are well set.
I worry that teleporting in produces "uislands" of static troops that can get isolated, as well as taking points from much needed bikes

First off..Ya shouldn't ever really put plasma on bikes.Overheating on a Biker really hurts, Bikers don't come cheap and overheating with plasma guns on them will really hurt.
Your "Melta Death" squad is nice and one of the best options to go with.
2x Meltagun Bikers
1x SM Vet Serg with powerfirst and bolt pistol
And 1 or 2x Standard SM Bikers
And if you want to add a Attack Bike with them to give them an extra punch.
Thats a nice hard hitting squad, equipped to take on most things in the game. Oh and if ya wanna be really nasty you can whack a chaplain in there aswell and get re-rolls when they charge which = powerfist n power weapon death
I personally have 4 standard bikes with 2 Melta (bought 1 Melta used, was thinking ahead) and a HB Attack Bike, with a vet Sgt with a power weapon and pistol, maybe a combat shield. They just need paint at this point. I look forward to trying them out.
Here's a combo I find quite useful for tank hunting.
Techmarine on a bike with full servo with a plasma pistol in a
Attack bike squad of 2 with 2 multi meltas.
For not a lot of points you have 3 TL bolters-good for speeders, a Techmarine who can shoot both his plasma pistol, and the TL plasma pistol off the servo pack and re roll a miss who grant the re-roll to a member of his squad, and 2 Multi Meltas. I've found its useful to grant the re-roll to the multi meltas. Oh and its under 300 pts. Not all the shaby and different compared to most armies
Also like taking 2 Techmarines on bikes and sticking them in a 5 man bike squad with 2 melta guns and a attack bike with a multi melta. 2 Re-rolls!!!
