Obviously, DH anti-armor options are limited and/or expensive. Dreads/land raiders/IST's with MG's.
How about giving the army more mobile elements, and maximizing DH's effective short range anti-armor arsenal, while saving points on big stuff that's only nominally effective (IG platoons, dreads, etc.)
Here's what I'm thinking:
The usual IST in rhinos, with dual MG's, but add t-hammers. 35 poitns to make the sgt a vet AND add the T-Hammer.
Give each terminator squad leader a chain fist. 8+2D6 killyness and an extra attack in CC, whilst preserving the NFW..
obviously a T-Hammer in GKT squads, but the chain fist would trump this option.
MB on justicars. Old hat here, but worth mentioning.
eversor assassin. MB and neural shredder are effective.
MB's whereever they can be taken, incl. IST squads if they don't equip T-Hammers.
THen on the other side, maximize anti-infantry shootiness and cc power, which is where we excel. This MIGHT work out alright, but would require finesse to use effectively. What are your thoughts?
To start, I wouldn't give the stormies a thunder hammer...it costs 35 points, and only give them strength six, which isn't that effective against vehicles--for less points you could give them all krak grenades and get 5-10 attacks for fewer points.
I do like the chain fist in the terminator squad, it gives you an extra hand to hand attack, and allows you to destroy vehicles. I have used this before on my grandmaster, but never actually used the chain fist in hand to hand because I wanted to kill the dred before it instant killed me, however if you were invisible in a squad I would diffinately use this option.
Melta bombs are Ok, but I think that a lot of people are going to stick with the old hat stuff because it tends to be more effective. I like the dreds, I just wish they could take tankhunters.
Something that I tried and worked quite nicely was an Inquistor and retibnue in either rhino or chimera. Give the Inquitor a Combi-melta, Three Warriors with melta guns, and two sages. This comes out to 190 with a rhino. It's kind alike a counter charge tank hunting squad. Also good for slagging termies in a pinch.

I do something similar, except I don't get any of the fancy extras. Just bare bones squads of IST.
I have been running three squads of 9x IST with Rhinos(x-arm, smoke ) with two groups having 2x metla's and one having 2x plasmas. Total cost is 504 points.
No other upgrades keeps bare bones cost at 168 per unit. First turn I always move 12 inch and smoke. Next turn see what happens.
Occasionally I throw out one squad and add a LRC with regular grey knights in it. Nice unit to draw fire and take every shot it can...
Rhino based IST has been supprisingly effective, also seems like two of three units take out there cost in enemies regular troops...plus a vehicle or two... Plus whenever I have a dread or LRC the rhinos are always left to run around and block LOS or charges on the battlefield because the LRC/Dread is taking all the shots.
I'm right there with you; I've just started collecting my GK army but my goal is to have an army that probably feels very similar to yours, but I am focusing more on the MG side of things with the IST's in rhinos or chimeras, but I also had an idea that I haven't begun collecting the pieces for yet, but I was thinking of making a sort of "firedragons" Inquisitor retinue...3 warriors with MG's and 3 acolytes with combi-meltas, probably a familiar and a sage and an inquisitor with a combi-melta, riding around in a rhino. Could end up being overkill, and it could turn out that I could get the same effect using just the 3 warriors, but I really like the idea of 7 meltaguns.

The few options DH have are pretty straight forward.
I tend to prefer inducted IG. Love the sentinels (they are just cheap, but carry a big gun)
If I could make a wish and have it come true, I would ask to get a anti-armor psychic ability for inquistors or GM's. I think it would fit the fluff and make psychic's useful.
IST's with Meltas are a great option. another option out of the allies bag is a squad of Sisters with 2 meltas. for 3 shots. stick them in a rhino with extra armor and smoke, for a little over 200pts. that's with a vet. superior. you could put a combi-melta on her for a few more points.
plus, they're in power armor rather than carapace.
even better is if you can get a dominion squad of 4 meltas. it gets pricey, but it's slag-a-rific!
usually I tend to take 5-6IST if I'm going to take them, to cut corners on points.
Someone mentioned a GM with a chainfist. How does that work? Do you have 4 Nemesis attacks and then 1 chainfist attack?
