Well, I have numerous dice but I am considering new ones for my Orks. Where did/do you get your dice from? Are they just general or did you buy them to match your army?
Do you have any special 'customs' when rolling?
Well, I got the basic GW version of the dice, it came with a nice box and a scatter die (which my buddies and I needed desperately).
I don't have any special customs while I am rolling, but my last game my buddy and I were in a 3-way match with my brother (all against each other at 750 ) and he was manhandling us both, so we both did a sort of "Jedi mind-trick" thing to make him fail the saves on his Terminators, and it WORKED!
He decided to take a wound on his lord from a lascannon so he could make the Invulnerable (which he was sure he could make) and it was a one. We did this the whole game, and it ended up with my Broodlord killing almost the entirety of both armies that I was facing alone, with one wound left, because nothing was touching him.
Call it superstition, but I call it THE FORCE!
I just use the dice I accumulate from the bigger GW packs plus whatever people give me. I had over 30 dice at one point, though that's down to about 20 now.
As for any customs, here are a couple of superstitions that I've posted about in a couple of previous threads:
*If you roll well to hit, don't use the same dice to wound. This is because their good luck has all run out.
*Never call them missile launchers. This is because they have the word "miss" in them, which is a bad thing. Rocket launchers does tend to suffice.
Most of mine are just general dice. I got a nice set of 10 in a tin from GW for scatter/artillery, also for my orcs, whom I bought green dice for recently too. I have a collection of small dice in pairs for magic, each shaman has 2 dice of a unique single colour, so I know whose are whose. Generally I just accumulate dice, though there is a board game shop in Bath that sells them. I frequent there too often looking at fun new games.
Oh, and the dice with 2, 4, 6, 8, 10, <!> on are MISFIRE dice, not artillery. The game's more fun that way

I got myself a sexy little block of 36 dice for playing with, 12mm Scarab Jade/Gold Chessex brand from TheWarStore.
I don't like the typical 12mm dice so I order mine from chessex, they're 16mm golden colbolt.
I have 12 glossy pink dice that I bought to praise my future 12 pink kroot. But after getting tired of the 1's and 2's using them with Tau, turns out they were just rolling for the wrong army! With Chaos my rolling is phenomenally better, in every situation. Obviously Slaanesh blessed!
Signature? What, do I sign my name here or something?
Actually now that I think about it, I sometimes whisper to my dice as if they were living things asking for fortune or mercy!
I have that metal tin of 40k dice, plus a couple small sets I got in large "starter" boxes, plus a cube of 36 Chessex dice. In addition, a guy I occasionally game with gave me a couple of tiny dice (forget where he said they came from) that I can easily fit on the bases of multi-wound models as wound counters.
I don't have superstitions, but it's customary to mix up my dice for functional purposes ("This one is the meltagun shot.")
