It makes sense, since it is a squad now, so I would say yes you can. After all, it is in the name. Some options you wouldn't be able to take though, without breaking a Immutable or Mutable Law first.

I also have a question. It says your kill team can have a librarian or commander for a HQ. But why not a chaplain?

After all, they're supposed to be like tyranid veterans as it says in the fluff (Trained by fighting tyranids). And supposedly they were founded by Chaplain Cassius, an experienced tyranid veteran.

Could someone please clear this up for me.

The people you are refering to are Ultramarines Tyrannic War Veterans not Deathwatch. As for why you can't have a chaplain I am not sure but basically because they don't say you can have one

I think it's because the deathwatch are pulled from different chapters and a chaplain is pretty dedicated to their own chapter, rather than fighting for a kill team. But I don't know, probably the same reason that you can't have terminators in a kill team - GW decided not to give you the option, because they didn't feel like it.

Doesn't it say that Cassius invented the deathwatch? Still the deathwatch do mostly fight tyranids or at least thats what they did to start of. (I think)

No the Deathwatch are an Inquisitional organisation that borrows Space Marines from multiple Chapters.
