Personally, although not a fan of dragon mages or LSG, I like the third list best. I think its more balanced with reasonable magic, solid core with a good selection of the elites DP's and SM's. This list seem to cover all areas of the game, fast movement DP's & DM, reasonable fire power LSG & RBT's, acceptable magic 2 LvL2's and good CC SM's & DP's. It seems the most balanced of the three.
In the second list the SM seem to be in a form of limbo, no point keeping them with the archers but they are not fast enough to keep up with the DP's and dragon. If you are going for a calerdoran list have all DP's and or ellyrian reavers for a basically all cavalry list except for your minimum compulsory core choices.
The first list is probably closest to my style of play, but all infantry lists are notoriously difficult to play and to be effective and perform adequately they need to be very focussed. Obviously this is only my opinion, I like the fact that you have started your army selection with the fluff and i am sure you will find a list and a theme that will give you years of enjoyable and successful gaming with the HE, have fun and good lick.

Personnally I think the third army is the best, because it has a good amount of strong and resonabley large units, this means it is very balanced, and has a lot of bows and magic.
The dragon prices and dragon mage will be able to make a strong flank attack while the SW will be able to hold the other flank this leaves the LSG to hold the center and enleash alot of bow fire.
