It states that magical weapons of enemy models become mundane versions of the same type, however, how does this work against models who have magical attacks such as daemons?

Yes would be my guess, they revert to hand weapons in the case of Demonettes, Nurglings and Horrors and great weapons for Bloodletters.
Another interesting question is:
Is killing blow an ability of the demon or his weapon?
That's easily answered if you have the Demon book, it is probably the demon's ability not the weapons though.
Can you use Vauls unmaking to unmagicalise their weapons, or are they 'gifts' that can't be taken away, like everything else in that book?
Both the Talisman and Vaul's unmaking specifically target the magic items. They have no effect on daemonic attacks, Tomb Blades/Wight Blades, or anything else that grants "magical attacks" but isn't a magic item.
I sort of new about that with respect to Vauls unmaking, but thanks for straightening me out as far as the Talisman goes.
Yeah, I agree it specifically targets the weapons, not the ability to have "magical attacks." Like the Brentonnian Grail Knights, they have magical attacks but they don't have magic lances. The TofS would have no effect on them.

Ever magical item is useless against certain things. I do not set up my army for a certain opponent but try to always make it a general list against everyone.
