I thought I'd use a white lion from the chariot box to fill the 2 empty bases in my Spearman unit (box = 16 models, my unit = 1. I'd also give the champ the White Lion rider's cloak and shoulder etc. to make the unit stand out a bit.
I'd also like to know how you people would model a Noble riding a Great Eagle? I don't know if the Noble's rider-legs would fit the Gamezone Great Eagles back.
I used a pegasus, and then used the HE noble kit and the bretonian legs, you can see it on my WIP thread.
I haven't used or seen the gamezone miniatures but you could look at the sylvan riders, tuse their legs (high elfed up a bit) and give them an elven torso.
GW makes a miniature but I don't really like it that much hence the pegasus, I have an old eagle rider and it is ok but nothing special, the problem is always how to mount stuf as eagles aren't really meant to be ridden. Gamezone mounts them kneeling or crouching on the back of the eagle, GW has riders straddling the eagles, neither looks very appropriate really.
The old Games Workshop eagle rider is quite nice, but the alternative would be to, as suggested, use perhaps a wardancer lower torso, as the wardancer legs can be bent at the knee similar to a conversion Mike McVey did many many moons ago (can't seem to find a current picture...)

I guess you could make it snow base forest bases for all ythe models and some cool fur with greenstuff
The idea for your spearmen doesn't sound bad at all. Maybe you can paint some Chracian symbols on the shields as well, to help identifying your regiment as coming from Chrace.
