My next opponent is 2150pts of Bretonnia!
Heres what I can field
Lord or Commander on foot
army standard bearer on foot
2 x Mage on foot
1x Mage mounted
Archers X 12
Spearmen x 20
Any suggestions would be very helpful
Forget archers, and forget seaguard. Neither will work very well against Bretonnian armour.
Bolt throwers are very effective, and at least one eagle should be used to slow them down ASAP otherwise your bolts won't get much chance to kill them.
Choose a law with offensive spells that either ignore armour saves or reduce them by a lot, they'll be useful. Take the seer honour to make sure you get the right spells.
Dragon Princes are good because they are faster than Brets, you can get the charge in.
Don't take a large unit of swordmasters, but use a small unit 12 or 15 to try to get on the flanks, they'll die just as easy as spearmen but should be able to pack a punch if they get to fight.
A nice combo for a lord might be armour of the gods and blade of leaping gold. 7 s5 attacks is sure to kill a few knights.

I guess what I think ill have the most trouble with is the unit of Pegasus Knights that I know he will be using!!
Yeah pegasus knights are fairly tough and hard to hit at range.. I'd actually suggest pointing magic at them, because their skirmish formation doesn't matter since you don't need to roll to hit and they can't have a damsel with them thus getting magic resistance.
But I'm sure you know to keep them away from your bolt throwers at all costs.
Bolt Throwers killed me the last time I took my Bretonnians against a High Elf army.
I'm a Bret as well and I can never kill elite infantry. Even though I am famous for incredibly lucky dice rolls.
Phoenix guard might work, if you can survive the first round of combat with a charging unit of knights you may be able to hold them.
Remember the lance formation has massive flanks so heavy flyers are good as well.
