I was wondering what paints you guys use to paint the hair/beards of models. because I can't find really good matching colours.

It sounds like you are referring to colors? The easiest answer I could give you is to take whatever color you want the hair to be and start with the darkest varient of the color and lighten it up as you highlight by either adding white or bone to the base color.
Personally I would prefer to add bone as it keeps the color with a warm natural tone.
It is easier this way and you keep the same general look - rather than trying to find 3 individual colors to paint the hair with.

When doing beards or any kind of hair it is important to think about how clean it is. If you use strong shading and highlighting the texture of the hair will be very obvious. However typically when it is easy to see the streaks of a person's hair it is because it is very dirty. Another reason is they are old and the hair is turning grey but not in an entirely uniform way which is common.
If you use highlights and shading that aren't really strong it will look cleaner. I have painted up quite a few Zombies and Chaos marines and I do thier hair with strong highlights and shading because it probably isn't the cleanest.
