Especially for my Necrons legs and head the chainmail is really blotchy and not very smooth I try to file it off and put on some more but it just isnt working.
For you to know that was my Golden Demon entry that I now gave up on and I will buy another Warrior box and start on that this week. But I will try to fix him up as he looks discracful but how can I get SMOOTH CHAINMAIL!
I do shake the paints
um i cant really think what the problem would be, but most likely you either aren't watering down the paints enough or just using too much paint on the model..

Mix/shake it well before use.
It is possible to water down metallics too much. When it happens the solution can't suspend the metal flakes and they quickly settle to the bottom.
And over there we have the labyrinth guards.

Well you still should water down your paint but you will have the mettallic flakes sinking to the bottom. Fear not though, instead of mixing water with your paint use matt medium. It is a thick goo like medium which acts as a thinner and holds the metallic flakes togther.
