At the moment it looks pretty good...the hardest thing to sculpt I think is going to be the face..
Yeah an Ogre would be awesome; it has a huge hole in its stomach already. But I guess you might want it slightly bigger than an ogre, like a tyrant or something. Personally, I would say a giant is too big, if you were to use the whole thing. But yeah, great job on getting the sewn flesh down! Have you sculpted the guts yet too? I did that once, and it was harder to get a good, textured intestines look than I thought. It was basically a bunch of rolled chunks of GS. It got the job done, but it wasn't what I had imagined.
Thanks. Yeh that was my biggest issue is ogres are smaller then what i want and giants are too skinny. I am going to work on the guts next. Also found a store who sells the giants feet head and hands for $3 as one set. So I would be left to sculpt one hand holding a chain/hook. The more I look at it this head is almost perfect for this.

Some extra details on the intestines would be fantastic.
I actually think after some thought that the best way to get the right effect is to make heaps of small balls of putty and squeeze them together.
Yeah, the ball idea would probably work well. What about taking bass wire and dunking it in white glue?
