Im looking for a new army, for 5th edition I would like a competitive army that is lots of fun to game with and therethore means I wont be switching around from army to army all the time.
I'm also looking for an army that will be a real challenge to paint and I can make my own colour scheme without breaking any of the fluff background. Im happy spending 2+ hours on a model. Also an army that I can convert easily would be good too.

So remember... An army that I will stay with for a long time, can challenge me at painting and will be lots of conversion opputunities.
Chaos space marines are a great army, full of conversion opportunities and very powerful. There are infinite ways of using them to suit whichever playstyle you enjoy along with the option of making your own renegade chapter with it's own colors.
Sajiisde makes a good suggestion and if you don't go with that I have to say Orks! There's infinite conversion possibilities and as long as you paint their skin green you can't go wrong.
Starting can be relatively cheap thanks to the Assault On Black Reach boxset and there are many styles of play you can use: a horde or speed freaks force are just two examples.

yeah, but I cant paint them my own way or I would be "breaking" the fluff background as the Eldar are split into different craftworlds and thats how their warriors are painted. The aspect warriors are all painted the same.
Orks! Its always a blast modeling and converting them.
