I was just planning to convert a few Vipers into a few Piranhas...my question is whether or not the size difference is too significant to do so...
If not, do you guys have any ideas on how to make the jet bikes look a bit more Tau like?
Isnt it better to buy a piranhia? As eldar-> tau conversion isnt very viable, both have very distinctive looks.
If u realy want to, try adding 3-4 mm of green stuff to model the piranhia shape and then another 1-2 mm to slowly build outer side of the model.

I know it's not a pirahna but I thought it was just plain cool
It would really be a lot easier to simply get some piranhas as they really don't look too much like vypers.
However, I do believe that quite a bit of green stuff and plasticard work would make a decent piranha.
To me a Vyper is a Vyper and a Piranha is a Piranha. And I say it's hard (not impossible) to rebuild a Vyper so that it looks Tau instead of Eldar.

That said, to the OP: This is going to be very, very difficult. "Boxy" stuff like Imperial tanks, titans, etc. are easier, since making objects with angular shapes out of plasticard and green stuff is doable, but tau and/or eldar stuff have a lot of curves and things that will be... challenging to replicate, or even to augment.
It might help if you could tell us what look you are going for. What has inspired this idea? Have you seen something in a movie/anime/cartoon that looks something like what you have in mind? An example, even used as "concept art," will help you (and us) visualize how you might best approach this.
