I use loctite gel control super glue (UK name at least). It's easy to apply with the nossle and does not run everywhere. Also as a gel it dries quicker while I'm holding the model together.
My friend prefers gorilla glue as the glue holds it together tighter.
Both might be a bit expensive but I don't have much time for modelling so I don't need a lot at any time.

well for just plastic i use testors plastic glue. it comes in a orange or red tube with a white cap. for just metal or plastic and metal models i use krazy glue in the green tube. i can get 2 1/4 oz tubes for around 2 bucks. there is also a gorilla super glue. that somes in a clear bottle with a blue cap. that works very good and drys fast also.

Moisture is needed for super glue, not air. Just make the areas meant to be glued a little moist and the superglue will stick and dry much faster.
I use cheap super glue, as it seems to do just as good job as the type that costs more.
It's maybe a little more runny but works well for me.
The only thing about cheap glue is it seems to come it the tubes that fall apart or the top get stuck on and will never come off. So i guess your really paying for a betterbottle / tube rather than better glue.

Loctite is available in the US as well.
I've also had success with Krazy Glue (dunno if this is available outside the states).
Regardless of the glue, remember if you have the time and tools, pinning is most helpful, especially on metal-to-metal joins.
For anything involving metal, get some two-part epoxy. It'll hold mush tighter than superglue and will last forever, while superglue will fall apart after 10 years or so.

I find super glue with a little bit of foam or tissie just to help it stick works great.
