has anyone else noticed that the darkest grey GW make is codex grey, making (in my opinion) it impossible to do black well without mixing.
Yep. Switched to Vallejo paint because it was easier to work on a pallette, thin, add extender etc... Still use the Citadel metallics though. Much better formula for metallics.
BTW, Shadow grey is a little bit darker, but has a blue tint to it.

Yeah i would go with shadow grey OR you could stick with the codex grey but after youve done your highlights or watever you want to use it for go over it with a black ink wash.That will dull it down abit and wont be as grey.
Black ink is your friend. It gives a deeper, "blacker" black while also toning down the highlights.
Make a set of 3 black paints which are perfect for doing black with highlights - black, very dark grey, slightly less dark grey. Then for extreme highlights you can use codex grey and even white if you really want to go that far.
