I'd say Khaki for an allied type uniform, and Godex Grey or a darker grey for Axis? I don't know about Italian, Russian or Japanese uniforms though..

In general the allied forces wore a tan/khaki color, but occasionally there was a green or two in there, the forces had wooden stock weapons, so all stocks/main body parts should be a brown color, however, the SMG's that they carried were full gunmetal blue, so mix boltgun metal with ultramarine blue, until you get a slightly blueish tint, the metal should predominate. Helmets should be done in a olive green, and if you want to get into specifics, they also had a medium green netting.

Axis forces wore charcoal grey or green for their uniforms, and dark grey/black helmets, if you can decorate any ornamentation on the uniforms with a deep red (burgandy) snipers would wear whatever color was suiting.

Russian forces, a darker grey/mottled charcoal mix as well as khaki and light green, their dress caps were very simple, just looks like a box split in the center, however their battle caps were just like the valhallens looked. Snipers wore usually a deep grey/brown mix since they fought in urban areas like the battle of stalingrad where there was a lot of rubble, and areas to hide.

French forces wore uniforms similar to the allies (though more leaning toward browns and greens I believe), but instead of helmets, most of their "kommando" forces wore berrets (use the stormtrooper head on most of your forces)

That's all the ones I can think of.

If you would like a better idea, look up "World War 2 Uniforms" and you should find a few decent sites.
