Here's a virtual tour of a WWI trench.
I don't know if its the 'best' way but what I do is build up the entire battlefield with multiple sheets of 4x8'(I have big tables in my garage) foam which I glue together on top of each other.
Then I can cut it to whatever shapes I want, including trenches. It tends to take up a lot of room though and is kind of static in that I can't move the trenches.
I do cut the foam into quarters(2x4') so I can mix and match when possible though.
Here's a site claiming to sell modular trench boards.
The load speed on the site is a bit slow though for my browser.
