as the title says, i'm looking for some ideas to protect my nicely painted mini's from gettin chipped through gaming, i was thinking of painting watered down PVA glue as a cheap alternative , then i figured that it will give my mini's that sheen that i don't want like, things like that put me off the hard coat, or the gloss varnish for i don't like the sheen:x ,

Why not spray matte varnish? Or matte clear coat (if there is actually a difference between the two, I don't know) - that way, you don't get the shine.
