At the minute I am working on converting these models in the hopes of expanding them into a fully fledged army, but for the minute how does this look for a 500pt list?
Coteaz - 100
Henchman Squad 1 - 89
7 Storm Bolter Acolytes
2 HB Servitors
1 Plasma Cannon Servitor
Henchman Squad 2 - 82
6 Storm Bolter Acolytes
Henchman Squad 3 - 91
3 Plasma Gun Henchmen
7 Storm Bolter Acolytes
Purgation Squad - 140
Any comments/criticism welcome, my only proviso is absolutely zero vehicles. I don't like them.... I may consider dreadnoughts/dreadknights in higher points values but the for minute it's zero.

You're running into a problem a lot of people do, by mixing squads with different purposes.
For example, your first squad has 3 heavy weapons, yet 7 storm bolters, assault weapons.
Psykers can go in the same squad as Plasma Cannon servitors (their targets are usually the same). You also lack melta guns, and either squad 1 or 3 will mindlock without an inquisitor. Mindlock effects the entire squad.
I'd suggest taking a squad with 3 Plasma cannon servitors, and a jokaero, stick corteaz here.
Take another squad or 2 of Warrior Acolytes with Boltguns and melta guns. This can be your fire support.
If you REALLY like stormbolters, you could take a squad of, say, 6 Acolytes, give them all stormbolters (edit: herp) , give 2 or 3 of them melta guns (yes, they can carry both), and put 3 psykers in here. That way you can have 6 Storm Bolters and 1 S5 large blast while moving, or, 3/4 Storm bolters, 2 melta guns, and a large blast. Etc..etc...
I've got a 1500 point list that *sort* of can be used as a guideline. Just take out the vehicles and you'll get an idea for what I was going for. Henchmen work best when they're thought of as Eldar: Focused at their task.
In answer to the mindlock question only squad one has servitors which would be where I put coteaz, squad 3 has plasma guns on acolytes and so would not mindlock. I was thinking in 500pts that melta's would be uneccesary? S7 (and rending on the psycannons) would suffice for AT at this point level no?
The storm bolters were less for manouverability and more for sheer firepower, though I see what you're saying so could easily swap squad one's weps to boltguns.

I saw "plasma gun" and thought "Plasma Cannon" for some reason. You are correct with Corteaz, though Corteaz is beastly when it comes to assaults (Sanctuary alone is fantastic). I'd scrounge up 25 points to take another inquisitor to baby sit your servitors.
I'd recommend dropping your Purgeton squad, and using those points to take a squad consisting of deathcult assassins and crusaders.
As for melta guns, they're ultimately assault weapons, in a squad with guys who have assault weapons. That was my logic. Either way, you can still give your special weapon guys another weapon. So give your Plasma Gunners Storm bolters too, or give your plasma gunners flamethrowers for when you want to assault with them. That way you can fire your plasma rifle, OR, fire your flamethrower
