So I tried originally to play the traditional blood rodeo list without devastators using only ASM and bikes. I have the army assembled w/ chapterhouse 3d flesh tearer pads no less and it is ready for paint but I can add or substract models. I have a few extra priests ( one in termie armor /one on a bike ), two LC terminators and two more regular bikers available.

I play it pretty traditionally running my bikes up and using them to bubble wrap my ASM. My libbies loook for side shots and my priests stay to the side out of combat. If the bikes get assaulted the ASM can leap over them and join in. The devestators are there in case I have to quickly demech - without melta - and am facing a list with a lot of bodies and/or difficult terrain shenanigans. The extra dakka seems almost necessary. I reserve one squad of ASM and my termies. They can both DS behind my opponent and create some confusion and the terminators are my rock cc squad.
It has a decent amount of firepower with eight MLs, 11 sources of melta, a couple of blood lances and PFs mixed in. I'm sure it will have some tough match ups - IG, Tau, Necron terrain shenanigans. I've tried to build a list that can ameliorate some of the weaknesses inherent in these lists.
Since i have not yet painted I can make a few changes. Suggestions? Leave as is?
Well, at least the lack of vehicles will be a solid matchup against some of your competition. Hopefully there is plentiful terrain in your meta; because at 49 you're still a little low for an all infantry force. The price of non-armored mobility I suppose.
Overall, I think it's very solid. As you say, You could run in to problems; but I don't see Tau/IG/Writhing Worldscape being your biggest problem; I think you will have trouble against lists that can out assault you.

You're a bit lacking in scoring units for a 2k list. Maybe add a paid of 5 man sniper scout teams for capping objectives?

I think you're min-maxing too much. All that power looks great on paper but, in practice, you'll be losing an important model with every kill. Also, the only units who can fight CC effectively are your scoring units. You may want to have at least one non-scoring shock troop unit.
In particular, I think you'd do well to run the bikes as a single squad of ten. You lose some firepower but gain a strong anti-GEQ and tarpit unit. Do not underestimate what bikers with FNP can accomplish!
Assault Terminators don't work well without a transport. Do you have the bits to make then standard Terminators? In fact, dropping a Devastator squad to field a double-cyclone Termie squad would provide similar benefits to the biker advice above. I like the idea of a large biker squad & large Terminator squad supporting jump troops. But you probably have the Devs already assembled?
Or you could just trade in the Termies for something scoring. Vanguard would be useful, too.
