Well I never realy liked Imperial Gaurd cause of minis but I tend to like big heavy tanks
Anyway this is my project list, prolly will remain for ever in papers.

Before I even start talking about your army list I would like to adress your "meat is murder" statement. Maddox sums it up pretty well: for every animal you don't eat, I'm going to eat three!!!

solid list, but I wouldn't take two groups of storm troopers, or at least not decked out the same way. It's a one-trick pony, so use those points on something else.
First of all, make sure you're using the most up to date rules. You can find them online at the GW site.

Your points seem off by quite a bit in some areas. Storm Troopers are elite choices now. Chimeras can't have Autocannons(though it would be nice). And I'm not sure what a Medusa Siege Gun, Slick Loader and Veteran Commander are. Check the rules and modify you list some.
p.s. Sorry if that sounded rude or anything, just trying to point you to some more modern information.

I've never even looked at the Imperial Armour books since they're not allowed in official tournaments. But as far as them being allowed in everyday play, it all depends on your opponent. If they say you can use it then it's all good.

one of my past girlfriends was vegetarian too (they seem to be a more re-occuring phenomenon), when took her out to dinner once, i told her to go ahead and order the steak platter, and i'd just trade her my mashed potatoes and vegetables for her steak; seemed like a fair trade to me, she didn't find it too amusing... she quickly became a past girlfriend after that

Your list does lack anti-tank power and low ap weapons. Aside from the exterminator and plasma pistols you don't have much ap2 weapons and your vanquisher seems to be the only real anti-tank unit.
I'd switch the stormtroopers to carry plasma or meltaguns and try and cram in a few heavy bolter sponsoons, 9 heavy bolter shots from one tank is alot better at taking out 2+ armour than a battlecannon is.
