I think you might be on to something. The bit about being one less at the core may refer to electrons at the core of a chemical, or something similar. A chemical that is in the ground, so found in food and water, but not in the air. Great potential for power, so could be a chemical that is used to make power, maybe nuclear...
The only bit I don't get is the 'without me you go mad, with me you grow sad', as I'm not sure how a chemical would fit that way around... For example Uranium creates power, but you don't go mad without it as far as I am aware...
