For my acolytes, i used imperial guardsman bodies, with fantasy accessories, and then greenstuffed them hoods for a more gothic feel. Most of the fantasy pieces i used were bretonnain, i have one acolyte with the hunting falcon from the knight box, one with a lantern and then all three have chaos warrior swords. The third man also has a mordheim hand crossbow. I would post pictures but have no digital camera, so this will have to suffice. Sorry. I also made crusaders on the same principle, but with chaos warrior shields.. Hope this helped!

I found that Necromuda pieces are great starting point for any WH conversions. Look at those model ranges and let the ideas flow... I for example made great Heavy Bolter Servitors from House Goliath Heavies with some extra bitz and green stuff. Warhammer bitz are also great (especially Chaos, Undead and Bretonians/Emperium)... Two more ideas for you... The first would be try the mordheim witchunter warband, these guys are really charecterfull, and obviously fit the whole witch hunter ethos. Second, wait for the new empire models to arrive, they will be plastic thus easier to convert, and they look pretty pimping! Hope this helped!
