Anyone give me any advice on this list, I wanted it to be quite good at magic defence as I usually play wood elves and get hammered with magic.

I'd run 3 butchers if you need defense that bad and give them total 1-2 dispel scrolls. Also with 3 butchers you're looking at a nice magic phase yourself.
Also 5 belchers costs more than 220 points. I'd split that unit of 5 into 2 units of 2 which end up costing 220 total, so it evens out.

As someone just pointed out to me, only one character can be carrying theifstones.
Also, tooth gnoblars sound cool, but are ultimatly worthless as they do nothing on casting with 1die.
They're also no reason to run bulls other than to get acces to more gnoblars. Ironguts give so much more bang for the buck: you'll notice the bulls units cost almost as much as the Irongut's, yet 4 IGs do so much more than 5 bulls.
With belchers: it's hard to rotate them correctly if they're spread out so wide, and 1 misfire can end up killing a lot more than 1 ogre, so it's best to stick them in small units to prevent hilariously terrible misfire rolls
Think of the bulls this way. 3 bulls + 20 gnoblar fighters = 3 ironguts. I wish I didn't have to field bulls to be honest, but my last game vs dwarfs I used them to kill siege weapon crews with an extra hand weapon. The crew gets 6+ armor save, which the bulls 4 strength negates, so you're basically getting 12 attacks for 117 points that on average will kill 3 dwarf crew. Not bad.
Basically I'm saying they have their purpose. Just aim them at low toughness low armor guys and watch them kill things. They'll never live up to the irongut standards, but you're stuck with them all the same, might as well figure a way to use them.

Are we basically saying then that bulls are pretty pore and its better to drop them for Iron Guts (I know you have to take at least one regiment).
on your first point it's cause their classified as a magic item and although a character can take more of them no other character may carry the same item -exception being dwarves

id drop the SB on ur bulls and jus keep them at 4 for frontage of 4 XD. Also trake the other bull squad and get more guts. i like to keep 4 to a scaud except my generals squad wid bsb XD. if you want you can make heavy hitting squad with your brusier and 1 butcher. give ur bruiser thiefstone and butcher a scrolly and bang stick. those things do wonders to dispel dice XD. and make this squad of 8 4X4
