Well, I sold my VC army before the 7th edition rules came out, but now I'm interested in OK. I've put together a list that I would like to be critiqued (first ever for OK). If you find an issue with something, please explain why. Thanks!
Tyrant w/Heavy Armor and The Tenderiser --> 256 pts
Butcher w/Dispel Scroll and Wyrdstone necklace --> 175 pts
Butcher w/Dispel Scroll and Talisman of protection --> 170 pts
2ea units of 3 Ironguts --> 288 pts
2ea units of 24 Gnoblar Fighters --> 48 pts
4ea units of 4 Bulls w/Ironfists --> 640 pts
2ea units of Leadbelchers --> 110 pts
2 ea Gorgers --> 150 pts
Most people would say go with additional hand weapons over iron fists since most of the time you'd use the iron fists as ahw's anyway.
If I were considering that army, I'd try spreading out a bunch of bases/models to equal the frontage and see how much space it consumes. One thing I've had to adjust to in my OK army is just how much room is needed to deploy that many units. You might want to include something like a scraplauncher or slave giant instead.
I really think musicians are a must on OK units. My WEs run enough as it is and they have better leadership. I've had my ogres domino off the board with failed panic tests. It's disheartening to say the least.

Gorgers can be great. I have a skragg list and use four gorgers. They really upset an opponent's plans when they come roaring on the battlefield. Of course Skragg makes them better than usual since they enter sooner and gain combat bonuses as he kills.
I haven't used a slave giant yet. I just bought the kit recently. Check out the thread in the main OK forum for why I'm doubting a slave giant is the best choice.
I do like my scrap launcher. That large template is nasty when it hits. And a charging rhinox! :w00t:
I had the same experience as you. I started fantasy with a VC army and never had to worry about breaking from combat, panic tests, or whatever. Then I started WEs and found that, well, living critters sometimes run from combat, the wimps! So I always take a musician on them.
Then I started playing OK, which has lower leadership than my WEs, and those bastards run all the time! I'm going to start taking a tyrant with kineater just to keep his units around.
get in a unit rinox riders. They are really awesome. D3 impact hits wahooooooooooooo
I'd try to maximise the irongut/bull ratio as much as I could in favour of the ironguts, I think they are just so much better.
