The fact that he isn't Stubborn. If he loses a combat (which is well possible since Giant attacks aren't that great), then his chances of staying around aren't something I would bet my house on. Granted, he could lose by only one or two, but I'd still rather not run the risk. Now, if he does run away, that increases his chances of falling over, which has been known to happen when it is least convenient.
Plus, of course, consider his competition. I'd rather run Gorgers, Maneaters, and other DoW instead of a Slavegiant.

On a positive note Taking a giant is feesable just not optimal. Only take him if you plan on taking the giant breaker big name.

I can see him being a giant loss to your army. But I would take it anyway because its an awesome character with awesome rules. Use it as a flanker.
If he was stubborn I'd consider it, but I just love gorgers so much. They always seem to do good for me.

I actually like him... sure he's not stubborn, but he's also 50 pts cheaper than his stubborn cousin.... and he attracts bowfire and cannon like nothing else... and that protects my smaller, and more prone to panic Bull and Irongut units.... and like Octavian said, use it as a flanker... he'll negate ranks and whenever he does get something awesome (yell and bawl), he's fun to use...
Keep him close to your BSB... I know the general consensus is 3 butchers and a tyrant, but I prefer 2 butchers, a bsb, and a tyrant.... anybody can fail a stubborn 10... had it happen before on my stubborn dwarf lord, but even if you lose by 1 or 2, chances are you should be able to make a 8 or 9 re-rollable...
