Hi there! I used to play O&G in 4th edition but I have not played with them since. I am just getting back into them and building my army now.
My main question is about Big Uns. Do you take them? I was thinking that I would make a unit of 20 (5 across x 4 deep) with additional choppas, boss and Nogg's Banner of Butchery. This would give them 16 str 5 attacks on round 1. Is this worth it or should I spend my points on more boyz? Do I have to tell my opponent that they are big 'uns off the bat, b/c it seems like they would just shoot them to death rather than the other boyz?

Yes, go for them! get a unit of 24: 6x4 and give them 2 choppas. Stick a BOrc in there too, and you have a v nasty unit that doesn't suffer from animosity (as badly). the BoB is nasty too, but dont just use it with your big uns. it can be a nasty surprise for heavy armour when your BOrcs get 2 st6 attacks each!
In terms of telling your opponent what things are, I always state what a unit is when I put it on the table, what command upgrades it has etc. and if they ask again I tell them. It should be obvious that a NG unit has nets, but as the only big un models GW have ever done look more than a little pants as they are SMALLER than the current minis then you have to be a little more forgiving with them. I tend to model them with a lot of shoulder pads etc and some spare hand weapons from the BOrc sprue, and generally try to make them as heavily armoured as possible.
While i don't actualy play Orcs I reckon a unit of Savages with additional choppas would be the way to go, put that savage sharman with magic bomus for being in combat with them and away you go.
Savage orcs can be a liability, though they are more survivable than regular boyz (due to ward save, not armour). They are also v expensive to get a decent sized unit. Running a unit of 10/12 with 2 choppas is, i've found, generally enough to cause quite a bit of pain, especially when waaagh! is cast and you have RR misses
