I tried both and I think both are reliable but which is your favourite?

Personally I would go for the savage orc shaman if I would go for orcs. The fluff and lore behind them is just a little bit more interesting to field 'em in my opinion.
Point is: the frenzy rule... if u are at charging distance you are forced to charge U better believe on the reliability of special 6+ sv cuz your shaman is intending to suicide if something big is arround!!
Think the standard ork shaman is generally a safer bet.
Mostly because you wont have to charge at anything in range.
That said your shaman is most likely hiding in a big unit of orcs anyway, so if he has to charge the whole unit can, so you might aswell...
The extra attack and ward save will help in these situations.
Theres also the nice combo of savage ork, biggeds kickin boots and skull wand of kaloth, and you've still got enough points for amulet of protectyness.
Gives you a character murdering level 4 wizard, with a half decent save if you send him up against the right units.
This works particulary well with the big waagh combat spell. (I forget its name)
You can then make this guy the general, take two tooled up goblin shamans plus a BSB and youve got a good set of characters, an loads of magic to build an army around...
Note: There are probably better magic item combos on a great shaman, im just theorising...
And i still prefer the standard ork for more generic set ups.
A savage orc is more risky as he HAS to go in a unit of savage orcs or risk running headfirst into the enemy by himself. I've often put an orc shaman in a unit of NG, as he is better protected from being charged (fanatics) and really boosts their Ld.

Im just so tired of getting an entire magic face screwed up because the unit one of my shamans is in squabbles. Most of the time it gives my opponent possible to dispel everything without using any DS. So if i have my shaman in a unit it is often in a black orc unit - until they are close to the enemy then I place him behind.
I'd much rather face a savage orc shaman. I can deal with frenzy just fine. Or at least I can try to. I'd suggest a regular orc shaman that won't go bolting off after the first great eagle it sees.
Hint: Never, ever buy a savage upgrade unless you think he can kill whatever he's fighting against, because the first canny opponent you play is gonna bait you with your frenzy.
Savage orc boss in a chariot: Good. Savage orc shaman: Dead shaman.
Grand master of all things Chaos or dead. Such as your army.
