I've been wanting to start BFG for awhile now, having played Fantasy and 40k for many years, but I was wondering about a few things.
1. I've looked at the various races represented, and I want to give Tau a try, but I'm not sure whether they're a good "beginner's army" or not, since I know literally nothing about the game.
2. GW has models for the Tau fleet, but I really prefer the Forgeworld models, they just look more...Tau-y, I guess. My question is whether I could use the GW rules for a Tau fleet, but the Forgeworld Tau models? How would I go about doing this?
3. I've heard there were rules for the Forgeworld versions, but I can't find any on the FW website. Are these more balanced/better for a beginner than the GW ruleset? If so, how do I access them?

FW rules are the Imperial Armour books (cost a lot more than GW's books!
If your doing Tau its all about the torpedos, they work really really well.
Awesome, thanks! But what's a torpedo? I know a little about Ordnance, but I thought it was just attack craft or something, how do I use torpedos?
Torpedoes are fired very similar to attack craft, however when they hit its like a weapon. Tau torpedoes have some great advantages though which if you check out (not sure saying here would be against forum rules or not) can be very deadly, look at range compared to others and one other rule.

The draft2010 rules for FW Tau will see a more unique cool manoeuvrable more gunnery less ordnance fleet. Yay.
Are these draft rules just for Tau? Where or what indicates these new rules?

Back when I played more BFG people would ask me "what race?" When I'd tell them Tau, the very next question was "Forgeworld?" When I said yes they seemed very happy that I knew what I was doing. If you get the Forgeworld Tau people will ASK you to see your ships so they can admire them. It happened to me a number of times you won't regret it from a social standpoint.
I've looked at the GW rules AND the Forgeworld rules and found both lacking.
My friends were kind enough to let me play with a semi-professional looking fan-based set of rules.

Not official by any means and I'd never try to use these rules in a tournament setting but I found a better balance to my games. Especially the Escorts!
I am no such fan of the rules you point at. Outdated as well (they wanted to change things but never got around to do so). The Protector is really off, Castellan as well. In my opinion.
