I think 500 points is a bit of a small total to start with. Best idea is to start at 750, and go for four cruisers (2 boxes of plastic cruisers). That will give you a good base from which to build the rest of our fleet, and allows you straight away to play the "cruiser clash" scenario from the rulesbook.
Once you have those four cruisers start adding squadrons of escorts. There is little point having an escort flying around on its own. Apart from drawing fire it won't be able to do much, so always use them in squadrons of two or more.

You can do cruiser clash with less than four ships Rich, as well as using alternate forces for the same fight. I think it looks pretty good for a 500pt list; though I'd make sure to keep all of those escorts together even if they are different ships. its better they could all focus fire and be slightly harder to kill than one escort on its own. (Especially since in such a small game your opponents will try to fit in as many cruisers as possible to be able to combat your own cruisers.)
That devestation backed up by the escorts is probably enough to play merry hell on your opponents, the murder will just end up being overkill with the range on those lances.
