at where i play 40k we have a rule about drifting....in drifting if a flyer vehicle is immoblisised it drifts 1D6 and if it was to drift into another behicle then the flyer dies while the crew in the other vehicle are stunned and shaken for 2 turns (non flyers only) flying vehicles suffer a crew shaken and they too drift 1D6 but in the direction they are hit (if hit on the left they go right)
Stunned for 2 turns seems harsh, as is the destruction of the skimmer!
Suppose it is kinda realistic though.

instead of flyer do you mean skimmer? i think the fact that a batttle cannon or a ramming tank can only stun for one turn makes it unlikely for a drifting skimmer to stun something for 2 turns.
how about it inflicts a glancing hit on both vehicles? i think that will work in normal cases (like a hammerhead or falcon drfits into a predator) but the only problem i see is if a vyper drifts into a land raider.
maybe make a single roll on the table with modifers on the differences in front or total av value. like yyper hits a land raider so the land raider takes a hit with -4 to roll and the vyper takes one with +4. a hammerhead and a predator are the same armor value so they would take normal rolls. if the recieving vehicle is a skimmer they can try to move out of the way on a 3+ like ramming.
maybe consider hits if it drifts into a large piece of terrain like a building

Killed a Revenant Titan in one shot.
Killed 900 pts worth of Blood Angels in 2 turns while only loosing 4 pts.
