So this weekend I was down my local store and played two games at 1500 pts.
First was against wood elves.
My opponent placed his waywatchers behind my line in my deployment zone (i had no idea they could do that). I tried to kill them in combat seeing as they're a ranged unit but they tied my skeleton block up until their army was on me. Generally I just got massacred because my opponent was more experienced than me and I used my chariots poorly.
The other game was against chaos warriors.
This game went equally badly, I tried to take out his chaos knights with a unit of chariots with a prince in it, however after rolling 14 impact hits I did not cause a single wound to them and in return he destroyed the entire unit. A lesson learned, clearly chariots cannot beat knights :p I then charged the knights with my 4 ushabti, who due to my bad luck rolled 12 attacks and hit with 2 and killed one knight. In return the whole unit was wiped out again. My scorpion scattered into the block of chaos warriors where it swiftly died.Burrowing it might have been a mistake against chaos warriors. Other than getting a lucky hit on the chaos knights (they're small so hard to pinpoint with it) with the SSC, how else can they be dealt with? I feel like my ushabti might have beaten them without such bad luck or that the scorpion might have killed one or two.
I also play a goblin army (which is considered to be a weak list) yet armoured units like knights are easy to deal with using either fanatics or my doom diver which hits most of the time even when it scatters.
Bet you were just unlucky I would have tied the Knights with a block to hold them still until Chariots can charge th flank or rear.
Waywatchers are elite - they are good in combat AND in shooting. Part of their charm is players always presume they are simply archers. They have two hand weapons for one so twice as much potential damage.
Knights you need to pick your fights carefully, depending on what marks they have can alter the flavour of annoyance they have. I think they're 2+ armour saves as well, they need high strength to give them a good kicking. Avoid letting them charge if you can and flank if at all possible to minimise their return attacks and tie them up until another stronger unit is available to take them out completely.
Fantasy: Wood Elves, Dark Elves, Beastmen and Tomb Kings.
LotR: Misty Mountains and Rohan
All you need to keep the waywatchers from getting behind you is something with 360 line of sight in your backfield...if you can see them, they can't deploy back there. Don't war machine crews have 360LOS? What about a casket priest? Certainly, your heiro would qualify, if he wasn't in a unit... There are ways to keep those pesky waywatchers in front of you where you can deal with them...

The waywatchers were possibly placed illegally... even with their special deployment they MUST be in or behind terrain. Many players mis-interpret their special rule, just something to check up on.
