I've been looking at a lot of VC army lists lately and I'm surprised to see that there aren't a lot of people taking mounts, particularly the Hell Steed, which I had assumed would be popular. Is there any reason for this? Would someone more knowledgable care to write a bit of a VC Mount tactica? ie When to put your characters on mounts and how to use them when you do.

One list Vonsmall and I toyed with was 4 vampires (lord and 3 normal) all maxed out for power dice (Master fo the Black Arts) mounted on hellsteeds. They'd stand next to a black coach (or 2) and all would charge together. With 17 power dice next to it the coach should be powering up fast and the impact of a coach and 4 vampires would be nasty.
Problems were obvious though, namely vulnerability of the vampires and the rest of army lacking march due to the vampires gallavanting off.

Well the main reason i dont use mounts if because Vampires generally do better inside large blocks of infantry. Although im currently making a list thats designed to take the fight to the enemy, and then smash them to the ground. And a Hellsteed may well be featuring in this list.
The only problem with the Hell Steed is that he now cannot join any units. BRB states that characters on a flying mount cannot join units, even other fliers. Makes him very susceptible to enemy magic / shooting, and vampires in general are not really that durable.
It makes them too vulnerable. Model on Hellstead = Model can't join units = Model gets shot to death. Vampires aren't *that* hard to kill, and when you lose them you lose! It's really tough to make a throwaway vampire that you can afford to send off and be a nuisance the way you can, say, an Empire captain on a pegasus.
Besides, I can give them flying horror for the same pts on a lord, not many more on a hero, and not lose the ability to join units. Being able to hide is a lot more valuable than +1 armor save and an extra S4 attack.
Well, being able to use a lance for + strength on the charge is a big benefit... but not worth it, for the reasons already mentioned.
For only 8 points a Nightmare is a steal for hero vamps, even ones that go in an infantry bloc. Besides, I think it looks cool to have a big mounted leader sticking up out of a bloc of infantry.
As mention, a Hellsteed is a no-go, however.
