I was wondering how many dice people use in order to cast each spell?
Could you be more specific? I think you'll find that generally, people use a varying amount of dice, depending on how many dice they have left, how badly they want a certain spell cast, if they want to bait out scrolls or not, and, of course, the spell itself, amongst other variables.
Well for the basic raising spell i only use 1, but saying that my vamp only needs a 2+ to raise ghouls so thats why, but the generic rule i beive is something like
4-6 = 2 dice
7-9 = 3 dice
10+ = 4 dice
roughly but what ever you do remember to cast the low values first, as my lord is the summoner and i make sure his magic is all done before i cast any other spell that takes more than 1 dice as i cant afford a magic phase ending due to a miscast way before i summon all i need.
What zaki said sounds about right, but of course you have to consider any buffs you get, like all the +1 to cast items, if you need a 2+ or 3+ to cast, its easily worth just spending the 1 dice on.
Don't forget though that a roll of 1 or 2 is a fail regardless of buffs. You still need a minimum 3 to cast, all the other buffs (+1 to cast etc) get added on, so if we have a vampire that has +2 to cast IoN and we roll a 2 - that's still a fail. If we roll a 3, it becomes 5, and so on.

Well yeah, but i think itd be safe enough to use 1 dice. for a 3+ anyway.
Only time id consider using 2 dice to cast a 3+ would be if i really needed the spell to go off.
Mostly I was asking about IoN. I was thinking that usually it was on a 3+ I would use 1 but I have also heard that some people use 2 because that means only double ones would make it fail.
One time that you do NOT want to cast IoN on a single die, is if you see the special character Villitch in a WoC army. He is a capable to absolutely shutting down Vampires- he turns the powerdice from any failed enemy cast, into a dispell dice for himself. So casting IoN with a 4/6chance of it going off is great, but that gives him a pretty good chance of gaining a dispell die for later.
I typically follow the standard casting values, except that i DO cast my IoNs on 1 die. Especially because my army generates ungodly amounts of PD to spam that spell with.
Hmm.... i totally never seen that 3+ minimum before... just thinking if its worth taking the staff now for my cast lord when all hes going to do is summon on 3+ anywayz
Well, assuming I'm not under any pressure I tend to use the average roll to dictate how many dice I use:
0-4 = 1 dice
5-8 = 2 dice
9-11 = 3 dice
12+ = 4 dice
Strictly speaking, using 2 dice for a casting value 8 spell isn't playing the odds, but I can't think of any 8+ spells that I use regularly, or regularly find my self in a position where I'm desperate to use them.
