I just finished reading the Vampire Wars book. The writer describes the GG to be 7 feet tall. So my first guess would be some warriors of chaos with a skeleton head or a ghoul head also maybe with some green stuff added in there for a more 'dead' feeling. however the bases for the GG are smaller then the warriors.
We ended up having to use the big long rank bases to fit 4 on and have the guy on the end having only one foot on his base and using the edge of the movement tray as much as possible.
Basically you'll have to plan out how the models will fit together.
It was worth it though. Those bulky warriors packed so close together look cool, just like a big wall of bad ass.

2000AD's answer to all "How do VC deal with ..." questions: Forbidden Lore + 2 Power Stones.
Further answers will require more vodka.
Cramming guys from a 40 to a 25 is quite a pain. I would advise against it.
Also- I can't quite find a theme to your army. Are you going for an Ork and Goblin idea? If so, why the M@A for skeletons? I'm not sure I understand the concept of your army, so I don't know what would fit in. Why not regular Grave Guard?
I use Skeletons for Skeletons and M@A for Guard, but I run a Brettonian theme.
Just about anything can be made into Guard though, with the right amount of skeleton heads and a little bit of finesse with your paint. My friend runs a pretty grisly High Elf theme for his army, capitalizing on the story of Harkon in the New World.
Also- if you do decide to go with LoTR Bats, remember that you can't use them in official GW events, thanks to stupid copywrite laws.
