How to deal with multiple monsters?

How would a vampire counts army deal with multiple monsters, say two stegadons, even two varghulfs, two hydras (heaven forbid)?

I'm new to WFB, so I get to play theoryhammer here. But I'd say either of the wight units would make decent monster hunters. Grave guard with GWs hit just as hard as charging black knights do, just make sure to pop on ASF and the number of S6 hits shouldn't be easy for the monsters to survive. Alternately I think Wraiths would be a great decision, as the monsters can't hurt them back, and they hit with high S as well and get more attacks.

Grave guard with Great weapons - Gives combat res and damage
Skeleton unit with Vampire with Great Weapon and Flayed Hauberk - Gives combat res and damage
Varghulf - Good attack with regen
Blood Knights- Good attack and Armour
Cairn Wraith - S5 and immune to non magic

I Like to throw the hellfire banner in when i can, rare occasions it might even end up on my blood knights.

Stegs are the hardest out of the bunch to deal with as they have US10 Stubborn and can be ridden. I always deal with the riders first.

all I can really think of is blood knights or black knights. grave gaurd with GW do have the hitting power but lack the armour to take on a big thing

But Black Knights after the charge don't have the hitting power. With low WS few attacks and no CR they are not a good choice.

Grave Guard can be raised more easily and tend to be backed up by a corpse cart more often than black knights

I suppose you could zombie the monster? Zombie one monster, charge powerful units into the other. The best way I can think of to get rid of the Steggie is to kill the crew if there is any, make sure it loses combat and hopefully it'll fail it's leadership 5 test, even if it's cold-blooded. My dice rolling shows me that it's not that hard to fail a leadership 5 cold-blooded test.

Spirit host them up. They cant hurt it and with outnumber in your favour your not going to lose combat. Spend a while eating Skinks/hydra handlers and then hold up for ever.

Thats exactly what i was thinking after my comment on knights.
By the way, don't try black coaches. I learnt that at a tournament the hard way

Explain what happened haha. I've done an awesome conversion using bloodknight horses and an acutal wraith so I have to use mine. I think they are very good but only do serious damage and survive long if you can get ethereal within a small amount of turns.

    I'll tell you two stories:

Story 1: Bloodthirster about to charge my general and his GG in the rear so i have to charge it with the coach. Enough said there.

Story 2: Black coach charges slaaneshi giant (coach is etheral) impact hits do 2 wounds. Its look ing good so far. Always striking first on the monster table doesnt scare me until he yells and balls and i take 2 wounds. Next turn, he rolls again on the table. Guess what result.
