I got an odd thought today
I was looking at a winged nightmare, and then a normal nightmare. Now a nightmare is a horse right? shouldn't a winged nightmare be a horse with wings?
why then does a winged nightmare look like my fourth grade french teacher? do you think a Pegasus night SANS knight painted black represent a Winged nightmare better?
Yeah, avihai, I've wondered the same thing. How did we go from horse to winged reptile? Nightmares are supposed to be constructs patched together chimera-like from the parts and pieces of other animals. Seen in that light, it's the horses that are off-kilter. But then again, what would a vampire or necromancer construct for his knights if not reanimated horses? There's not that much diversity in the Sylvania region.
As for a pegasus, I don't know the size of one, but I'd want something as big as the winged nightmare, or close to it. That way, it'd obviously be a monster (terror causing and large target), occupy the correct base (for lining up with enemies in combat), and look menacing on the battlefield.
Personally, I like the winged nightmare model, but that might be because I spent so many hours painting one. It's a much more attractive model than the classic nightmares.
As for your original question, why not convert? Converting figs is a lot of the fun in this hobby, and VC players love to talk about conversion possibilites for their armies so why not? You could write some fantastic fluff for an army like that, too.

Pegasus may look a little bit small compared to the GW model, they aren't exactly large targets, but they are on the right size bases I think. If you could bulk it out somehow, then it could work well, or maybe use a hyppogryph? That would be good.
Neat conversion idea. Take a nightmare horse, then take skeleton pieces to model bone like wings for it. It wouldn't look like it could "fly", but I guess you could just say that it was magically infused or somethin. Of coarse the Zombie Dragon's wings don't make it look like it can fly either.
If you could get hold of one of the old dragons - the great one I think - then that had skeletal wings (you had to model the leather flappy bits yourself), that would be ideal.
What i'm going to do once i raise a 2k army, is use archeon's horse and put Winged Nightmare wings on. put a mounted Blood Dragon on it and voila, and awesome model.
Expect the worst, so you won't be disappointed.

You could always make a winged nightmare out of a bunch of fantasy style toys/dinosaurs/alien things. But, a Pegasus would do nicely, maybe beaf up the model and make it look as if it has been dead for a while.
But if you look at the fluff it's pretty much just supposed to be a bunch of parts thrown together. I must say, though, that the current model is gross and I wouldn't put it in my army. Then again... I'd rather have a nightmare anyway for the armour bonus...
