Pardon if this question is silly, I blame my lack of experience in WHFB
I currently own a footslogging Dwarf army and am building a footslogging VC army; both of which are pretty slow so I thought I'd try something thats the opposite end of the spectrum: a very fast army. I personally love the Chaos Knight models over all the other cavalry models from the other races, so I thought I'd ask you guys for some advice on building a Cavalry-heavy WoC army.
Any advice on what to buy/field, and any playing tips?
For purchasing, I plan to go slowly, starting from 500 and adding probably in batches of 250 points as I go along.
Oh I forgot to mention.......I really just want humans in my army. I'm not a fan of trolls, spawn, and all those non-human things

Well, to start off since you're going to need some Core you can grab yourself a box, preferably two, of the marauder horsemen. They are fast cavalry and have a nice weapon skill to boot. Granted they are your unarmored units for a cavalry army. If you give these guys just flails and run them in five men blocks they will hit hard and fast where you need them to.
Then I would suggest grabbing a box of chaos knights, these bad boys will be the back bone of your army as a cav army goes. With a 1+ armor save all the time they can be quite nasty. They can strike at str 5 with ensorclled weapons at all times or 6 on the charge with lances. It's up to preference really but I would suggest filling out all your specials with these guys.
And at 500 points I would go with an Exalted hero on Barded Chaos Steed.

Note : I left Magic Equipment up to you but I think that this would be a pretty nasty list to begin with 500 points. Some others may disagree but that's up to preferences. Happy playing
At 500 points your not going to get much in, The Chaos units are so cheap why not aim for 750?

The best way to run knights is either naked or MofN and banner of rage, one of the key things about knights is their high ws, high T, and 1+ save. Their stats really make them like a unit of really tough infantry so don't be afraid to play them such. Let them take charges from infantry units they'll usually win.
Wow that kind of list is precisely what I wanted to play.....
But I'm just wondering.....with so few figures on the table, won't shooting/magic decimate you before reaching their lines? Or are the knights so tough they won't die?
Generally you'll want to o first so you only give your opponent one turn to shoot or cast at you.
I love my Heavy cav Khorne Knight army. At 2250 I have 1 lord on a Jugger, 1 Exalted on a Jugger, 3 Marauder horsemen with MoK and Flail, 4 x 6 Knights of Khorne (18 Str 5 attacks and 12 Str 4 attacks makes nearly anybody's day a bad one) and 7 minimum units of warhounds (these are a must in any WoC army but especially for Cav, the only games where they don't win their points back are the games where I win so easily I didn't have time to use them.
Some people will tell you to stay away from Khorne because of Frenzy, I say if you learn how to use it properly it's not a disadvantage, and if you have many Frenzied units with a big move your opponent simply won't be able to set up traps for all of them.
Great choice of army! Luckily, All-Cav WoC armies use units that are present in most armies anyway: Knights, Horsemen and Warhounds.
I, too, would recommend starting with the Horsemen since they are core units.
Then add a unit of Knights, and then hounds.

Just double checking, do Chaos Knights move as fast as a Juggernaut-mounted hero? Was thinking of putting my Juggy hero into a unit of them, but I somehow vaguely recall the Jugger was slower than the Knights....
Or is it my imagination?
They are the same move. Horses are Mv 8 and get a -1 for Barding. Juggy is a 7
Use your marauder horsemen with the mark of khorne and flails, 105 points for the unit and they can bring the pain.
