Quick intro, have played 40k for years, but never looked at WFB as it looked like a game for old beardy weirdos. Now that I am now an old beardy weirdo I feel as though I should give it a go, plus I teach and would like to learn all game formats for school Games Club rather than forcing them all to play 40k
Play WH and Orks in 40k, so decided to opt for something totally different again and looked the way of WoC as the modelling opps are cool and have never played a hard to kill army.
My plan was to buy a battalion and a sorcerer and using my massive pile of bits end up with something like:
Sorcerer (on a disc?)
5 marauder cavalry
Looks like just over a thousand points... questions are as follows:
1) Is anything in the battalion box not worth it, as it only saves 11 quid, and it seems warhounds meet with criticism...
2) For smaller point games what is a good hero to use, specifically are there any must haves, and things that need to be modelled, such as the disc or mounting them etc...

You're probably going to need 2 hereos for your WoC army, the sorecerer on disk is indeed very good, but you'll probably want either another sorcerer to back him up, or a killy exalted hero. As far as the batallion goes, i feel as if it gives a good deal of tactical flexibility out of the box, but if you want either an infanrt or cavalry heavy list you have wasted some money. Also, hounds are almost necesary in certain armies.
Well I went and spent some dollar, not on a batallion but on a load of parts from ebay, and it looks like I've got at least 10 marauder horsemen and 10 knights..
I will probably be marking them all Slaanesh and giving the marauders flails..
I'm assuming that with the small numbers and cavalry that warhounds would be a good investment, about 15 or 20 in total in squads of 5 you think ?
I will also be converting the sorcerer on diisc in time to come, leaving me with just under 100 points, any ideas? Not much choice for another hero with such small points left...
Contrary to your plan, marking your knights nurgle is the best bet for an army. Knigths are best nurgle or unmarked, slaanesh is good, but that -1 to hit is golden, and you can leave your mhorseman units unmarked at 1000 pts, you probably wont see too many terror causers, and they're still pretty effective and cost 20 pts less, hounds aren't all that necessary either, and you've now got the points for another hero, and btw a great build for your disk sorcerer is:
Book of Secrets
Golden Eye of Tzneetch
+1 power dice, 3+ ward save, can throw 2 magic missiles a turn. Excelent
In my honest opinion the khorne lord on juggy might be your next step, simply field him as a khorne ex hero. Most of the low pointer games i see getting played are a 1250 anyways. Not to mention, it will add that much more speed to your list. However, should you decide to go the dual sorcerer way, then you may want to consider a 2nd disk or something of the such to keep your entire army mobile rather than havin your one sorcerer sitting behind all on his lonesome

Unless you're running all khorne, or have some plan no one else has come up with yet (if so please share), never take more than 12 warhounds (units of 6), i find 2 units of 5 to be best though. if you take more they just get in the way, but with 2 units of 5 you can make very good use of them if you know how to, i.e. letting loose fanatics, redirecting units etc etc.
