I've always loved my hellcannon. Now in 8th it seems everyone else does too. Woo Hoo!
In what order should I prioritize my shooting targets? Elite infantry... (Sword Masters, White Lions, Black Guard etc..) Massed archer units.... Monsters/MI (Hydra, Tree Kins etc..)
How many rounds should I shoot/or at what point is it better for me to engage?
In case you couldn't tell, I typically run against HE, DE and WE. From a deployment stand point I usually anchor one flank with my Hellcannon. I run a balanced list with. Thanks in advance for your thoughts!
I would say that elite infantry would be its best target because it returns the most damage inflicted per shot. You can shoot it at Archers all game, but Archers aren't all that big of a threat to the rest of the army. You could shoot it at Tree Kin, but you are only getting multiple wounds against a single model, so much of the rest of the shot is wasted. However, if you are shooting at Eternal Guard, Sword Masters, Executioners, etc, you are very easily killing off large portions of a dangerous unit that is really expensive, garnering you additional victory points over other targets, as well as crippling your opponent's ability to harm you.
Past that, shooting it at Big Nasties like Giants and such can be really good, but it's kind of iffy against Hydras and Hell Pits because of their good chance of regenerating the wounds you put on.
So, I would say shoot elite infantry, then any Big Nasties that need to die NOW, then core infantry
I think that HC targets are more subjective than a set priority. Always aim for the biggest threat to you. Sometimes it is elite infantry, sometimes it will be monsters. Rarely it will be basic troops but hey, a big enough unit of them will take days to eat thru.
What threatens you is relative to what you bring to the table. If you have alot of maraders than the elite infantry is the threat. If you have alot of warriors high number units are the threat. If you have a hard time deciding, go with the safer route and aim for target that is surrounded by other targets. If you don't manage the direct hit you might have a chance of hitting something else. Also know when to lay off, sometimes all you need to do is hit a few wounds to comprimise potency.
Some people swear the CC holding power of this thing. Not really my style but again it is a more reliable way to run it. if you want to play it safe fire maybe the first turn and then start to move it up to protect flanks. Not my cup of tea but sometimes it's nessisary. Shooting there is a 1/3 chance it will do what you wannt, and 1/6 chance it will eff you in the bee. This raises the apeal of it being a monster, as all you have to do is pass a ld9 test to make it do what you want. Alot of times in this game reliability > Potential
I rarely shoot with it, for me, as a monster it has been doing great.
That being said, I will not shoot it if the chances of it scattering are to high.
If the enemy is tightly packed, I will shoot, but vs a gunline or a HE army that only has units two models deep, I prefer to stomp rather than shoot.
Also targets matter, If I don't feel I will do enough damage or only on worthless troops I don't shoot.

usually in large games, your opponent will deploy something nasty more than 12 away from his bsb. If that unit is not immune to psychology, they make a great target.
Has worked quite a few times for me, much to my opponents frustration, punishing them for poor deployment in turn 1 =)

i fought against a WoC guy who got 3+ ward on his chosen so i fired my cannon at another unit of his warriors to weaken them so my warriors cld taken them on, then turned to fight his chosen which kept them there for 3 turns while the rest of my army swept his off the table, ok it died but it did its job
the last game I played I used the Doom totem and a Hellcannon.
First turn I shot (direct hit) and killed 16 seaguards, they paniced of the table.
Second turn I shot (direct hit) and killed 14 Spearmen.
Third turn I hit my Lord, charmed shielded the heck out of that shot!
i always try to shoot where i have most chance on getting hits
so big units, als many units close together
i hardly go in cc, but if i do, it powns (like you all probably know)
I shoot it at big blocked units or units outside BSB to panic them. If neither options are there, the bumb because a CC machine. T6 with a 3 successful use only 5+ ward and 5 str 5 attacks and thunder stomp for 205 points? What army wouldn't want that. I know the beastmen would be drooling over this guy.
And who doesn't love it misfiring and you puppeting all their wizards into oblivion?
